Christmas just isn’t Christmas without a great bottle of wine, and Mrs. Wine Snob, Father-in-law Wine Snob, and I had one. The Chateau Roc de Pellebouc 2015 Bordeaux at $25 was all it was cracked up to be. It needed a few minutes to breathe before serving to everyone, but I could not resist. I sat with a glass before dinner and enjoyed immensely. For our Christmas dinner we started with some rather heavy cheeses as a little muscle to tame the beast. We then feasted on my world famous Chicken Cordon Bleu, some grilled vegetables, and roasted potatoes. One would not have thought to bring out this rich Merlot/Cabernet Sauvignon blend for a meal like this, but it accompanied everything very well. It had a beautiful richness with some spice to it. I thought that it had a little mintiness in the inhale and a slight chocolatiness in the tongue bath. We topped off the pecan pie dessert with some French Cognac – T’was the perfect Christmas dinner.
